Oysters, goose barnacles or big scampi, we always try them before putting into our glass display. At the height of the season we have the most selected seafood, as “ortiguillas”, they are as weird as beautiful in the deep sea, or red “santiaguiños”, a kind of small flattened lobster which taste is highly ranked over goose barnacles by great culinary critics.
Having such exquisite food there is only one way to cook it and that is to respect its original essence and to enjoy all its flavor, smell and texture.
Carefully selected delectable shellfish and prepared with its rightful seasoning. Delicious rice’s: with lobster, black rice with cuttlefish, seafood paella or our “a banda” rice, the most popular. Also rice with sea cucumber or scallop at the height of the season is a must.
Fresh line-caught fish, simply the best, straight out of the sea. Succulent dishes of monkfish, turbot or hake. Raosted, sautéed, “marinera” or in Basque style. Or as the client wishes. And for those of a more carnivorous nature a perfect T-bone steak or a Veal entrecote.
Traditional stews and home-made traditional Galician desserts such as “Oreja de Fraile” or the custard pastry rolls are very well known among Carballeira’s clientele.
